The spinach recipe with raisins and pine nuts offers a mixture of different and delicious flavors. Spinach and raisins are foods rich in potassium, which in turn helps control high blood pressure.
Ingredients
- 1000 grams of fresh spinach, without the roots
- 2 bunches of finely chopped shallots
- 2 minced garlic cloves
- 5 grams of grated Parmesan cheese
- 1 pinch of salt
- 10 ml of extra virgin olive oil
- 10 ml of lemon juice
- 20 grams of golden raisins
- 10 grams of roasted pine nuts
- Freshly ground pepper to taste
Instructions
- For the pine nuts, preheat the oven to 190°C, then spread the pine nuts on a pan and roast, stirring occasionally, until golden brown for 5-10 minutes.
- Soak the raisins in cold water for 10 minutes, then drain and set aside.
- Heat the oil in a large non-stick frying pan at a medium to high temperature. Add shallots and garlic, and cook until golden brown, 4-5 minutes.
- Add spinach and cook 1 minute. Then cover and cook until wilted, 2-3 minutes.
- Add the pine nuts, lemon juice, and raisins.
- Remove from the fire.
- Serve immediately, sprinkled with Parmesan cheese and pepper.
