500ml fat-free or unsweetened plant-based milk (almond, oat, soya)

4 tablespoons white rice

3 tablespoons honey

1 tablespoon orange blossom or rose water

½ tablespoon cornstarch

120ml water

1 cinnamon stick

2 tablespoons ground pistachios for garnish

 

  • In a small bowl, whisk together cornstarch with 1-2 tablespoons of cold water. Make sure there are no lumps. Set aside.
  • In a pot over medium heat, add rice, water and cinnamon stick. Cook until slightly done but still crunchy.
  • On high heat, add milk and honey to the rice, stir and bring to a boil.
  • Once boiling, turn heat down to medium and add cornstarch mixture and orange blossom/rose water. Allow to simmer for about 10 minutes. Stirring slowly and continuously.
  • Turn heat to high and allow contents to boil. Once the pudding thickens, turn off the heat.
  • Pour pudding into 4 individual portions and allow to cool at room temperature. Garnish with pistachios and transfer to the refrigerator to chill. Serve cold.

 

 

Nutritionist Comment: If you’re wanting even more flavor and feeling adventurous, try adding ginger, cloves and nutmeg to the pudding as well. This will give it a lovely warm flavor.
