Eggplant is included in many recipes. It enhances the flavor along with its nutritional benefit. We present to you a new and delicious recipe for eggplant with feta cheese.

Ingredients

  • 1 medium eggplant.
  • 30 ml of lemon juice.
  • 60 ml of extra virgin olive oil.
  • 75g feta cheese, preferably crumbled Greek feta
  • 80 grams of red onion, cut into small pieces.
  • 1 small red pepper, cut into small pieces.
  • 1 small chili pepper, minced, such as jalapeno, seeded (optional)
  • 5 grams of fresh basil, chopped.
  • 4 grams of chopped parsley.
  • 5 grams of hot red pepper to add flavour.

 

Instructions:

  1. The oven rack is placed 15 cm away from the heat source, then the grill is preheated.
  2. Cover the baking tray with aluminum foil. Place the whole eggplant on the tray and pierce several holes in different places to release steam. Roast the eggplant in the oven, turning every 5 minutes, until the blackened outer layer is burnt and a knife inserts into the heart of the eggplant easily, 14-18 minutes. Transfer the eggplant to a cutting board and let it cool so that it can be peeled.
  3. Cut the eggplant lengthwise into two halves, peel the skin and place the eggplant in a separate bowl, then add the lemon juice to it.
  4. Add the oil and stir with a fork until the eggplant absorbs the oil. The eggplant doesn't have to be completely mashed.
  5. Toss with feta cheese, red pepper, chili pepper (if using), basil, parsley, and chili powder. It is tasted before serving and sugar is added if necessary.
