For Salad:

100g diced strawberries

100g diced mango

100g raspberries

100g blueberries

1 pomegranate, arils separated

1 large orange, peeled, separated and cut into pieces

50g green grapes, halved

50g slivered almonds for garnish

 

For Dressing:

1 teaspoon lime zest

1 tablespoon lime juice

1 tablespoon orange juice

2 teaspoons honey

1/2 – 1 Tbsp. fresh mint, minced

 

For Dressing:

  • In a small bowl, whisk together lime zest, lime juice, orange juice, honey, and mint. Stir until well combined.
  • Dressing can be made prior (several hours, up to 1 day) and stored in the refrigerator until ready to serve.

 

For Salad:

  • In a large bowl, combine strawberries, mango, raspberries, blueberries, pomegranate arils, orange pieces and green grapes.
  • Drizzle with citrus mint dressing and stir to coat.
  • Garnish with slivered almonds.

 

Nutritionist Comment: Almonds add a tasty crunch, dose of healthy fat and help to slow the absorption of the natural sugar found in the fruit.
