Ingredients
- 2 grated zucchini
- 1 egg, lightly beaten
- 1 minced garlic clove
- 4 green onions, sliced lengthwise and thinly sliced
- 60 grams of whole wheat flour
- 3 grams of baking powder
- 15 ml of olive oil
- pinch of salt
- ground black pepper
Instructions
- Place the grated zucchini in a colander over the sink. Then add the salt and stir gently to combine with the zucchini; Leave aside for 10 minutes. Using a clean dish towel or cheesecloth, squeeze the zucchini to remove water and moisture.
- In a large bowl, mix the zucchini with the spring onions, garlic, eggs, and pepper.
- In a small dish, mix the flour with the baking powder, and stir with the zucchini mixture.
- Heat the oil in a large skillet over medium-high heat.
- Drop zucchini discs into the oil with a spatula, level each disc with a spatula, and cook until golden brown, about 2 minutes. Then flip to the other side, and grill for another 1-2 minutes.
