140g raw almonds

1 tablespoon unsweetened cacao powder

1 tablespoon dark chocolate chips 

6-7 whole medium-sized dates, soaked in water for 15 minutes

2 teaspoons date water (optional)

¼ teaspoon cinnamon

Pinch of cayenne pepper (optional)

Pinch of cardamom

 

  • Place the almonds in a food processoror high-speed blender and process until nearly they are the consistency of a fine powder. Stop before it turns to almond butter.
  • Add the cacao powder, chocolate, dates (minus the water), and spices and blend well.
  • Add 2 teaspoons of date water ONLY if your batter is too dry and not sticking together. It should be difficult to process at this point.
  • Transfer to a bowl and place in the freezer for 15 minutes.
  • Remove from the freezer and roll into 1-inch balls. They will be sticky but manageable.
  • Roll in cacao powder (optional) and keep frozen to keep them fresh. You can eat them chilled or at room temperature.

 

Nutritionist Comment: The combination of healthy fats from the almonds and antioxidants from the cacao powder and dark chocolate make these truffles a heart healthy option to satisfy your sweet craving. Keep the serving size in mind though. These can also be made with walnuts in place of almonds.
