This recipe is considered one of the non-traditional recipes for eating broccoli with tomatoes, as well as it is considered one of the ideal recipes for patients with high blood pressure. Tomatoes are rich in potassium, which helps control high blood pressure, as well as broccoli, which contains vitamins and antioxidants.

Ingredients

  • 340g broccoli, arranged and cut into small florets
  • 150 grams of small tomatoes
  • 2 minced garlic cloves
  • 1 gram of freshly grated lemon peel
  • 15 ml of lemon juice
  • 10 black olives, sliced
  • 1 gram of dried oregano
  • 15 ml of extra virgin olive oil
  • 2 pinches of salt

 

Instructions

  1. Preheat the oven to 230°C.
  2. Mix the broccoli and tomatoes with the oil, garlic, and salt in a large bowl until evenly coated.
  3. Place on baking tray in one layer. cook until broccoli begins to brown, 10 to 13 minutes.
  4. Meanwhile, combine lemon zest, lemon juice, olives, and oregano in a large bowl.
  5. Add the roasted vegetables and toss to combine. Serve warm.
