Ingredients
- 1 can (90 grams) of boneless sardines preserved in olive oil (preferably smoked sardines)
- 12 grams of chopped mint
- 10ml of extra virgin olive oil
- 8 slices of multigrain bread
- 1 medium tomato, cut into slices
- Half a yellow onion, cut into thin slices
Instructions
- Preheat the oven to 180°C.
- Sardines are rubbed into slices with a fork. The sardines should not be mashed, nor should the pieces be larger than 2 cm.
- Mint and oil are added, then gently mix the ingredients until combined.
- Slices of bread are cut into triangles. Then place the bread slices on parchment paper and toast in the oven until crispy and golden brown, about 8-10 minutes.
- As soon as the bread comes out of the oven, tomatoes are placed on it from the open side. Over time, the tomatoes will fall apart until only the skin is left. The remaining tomatoes are discarded.
- Then divide the sardines mixture among the slices of bread. Top each slice of bread with two slices of onion and serve immediately.
